Why would the germanic/nordic peaople sound like this? How could we know that these guys always played some aggressive/epic music instead of some funny dancing music for example

From those writings of contemporary cultures we can infer that the closest thing sounding to it is thuvan mongolian throat singing, so that is what is used in modern context.

I have been doing viking reenactment since 2004 and its continuously been a challenge to find enough forensic and anthropological evidence to give is a good reconstruction of how those cultures did things. Often times approximations have to be made, and there's only so many ways for the human body to effectively perform some actions whether it's disarming a sword or throat-singing "singing like growling".
