I've always interpreted this song as a couple realizing they aren't right for each other.

they met, he flirted with her/courted her (writing notes on paper bags)
they got together, but things weren't great after trying it. (you wrote a list of things I lack)

the chorus:
(you're a mountain, I can't climb yet) she wasn't ready therefore she couldn't be what he needed - hence the list of things she lacks

(I'm a painting, but you're blinded) he can't see her for what she's worth.
(always have to justify how my tongue dances) always having to explain herself - bad communication maybe?
(were barely getting by on taking chances) pretty self explanatory I think, they are trying on last hopes but the thread is close to snapping

(we've come to realize, it's us that we despise) the relationship just is making them resentful and they don't like what they are together.

To the person who asked for an interpretation of 'I'm a mountain your blinded' what I take from that is she is saying they are not the right fit for each other because the blind can't really appreciate paintings because they can't see them. Not that they don't care just that they don't have the ability to. That's what I take from this song in general
