You know, maybe she actually changed her mind and wanted him back, but was too proud to admit it, so she lied and said it was a test

No it's not. She was basically doing what that card urges: If you love someone, let them go. If they come back to you, then they are yours. If they don't, they never were.
She told him directly that he loves Rebecca and he denied it outright. Despite the fact that they both knew the truth. So communication clearly wouldn't work there. Heather just had too much self respect to be anyone's second choice. She wanted Greg to actively choose her over Rebecca. But Greg confirmed her worst fears. Just because she chose to give him a fair choice does not mean she should not get heartbroken if he, in fact, confirms her feelings that she is, in fact, not as important to him as Rebecca. You let people go even when you love them. That is what makes the whole thing so complex, real, and bitter-sweet.

She probably was feeling insecure in the relationship because he clearly is still pining for Rebecca so you said said if you like her then go for it and she was hoping he was going to say no I like you I don’t want to be with Rebecca but instead he proved her insecurities right.
